Summary
Rogan josh (or roghan josh) is a dish of Persian origin, which is one of the signature recipes of Kashmiri cuisine. Rogan means "oil “in Persian, while josh means "heat, hot, boiling, or passionate". Rogan josh thus means cooked in oil at intense heat. Another interpretation of the name rogan josh is derived from the word rogan meaning "red color" (the same Indo-European root that is the source of the French "rouge" and the Spanish "rojo") and joshmeaning passion or heat.
Rogan josh was brought to Kashmir by the Mughals, whose cuisine was in turn influenced by Persian cuisine. The unrelenting summer heat of the Indian plains took the Mughals frequently to Kashmir,which has a cooler climate because of its altitude.

Ingredients


  • 2- 1/2 cm fresh ginger, peeled and coarsely chopped
  • 8 garlic cloves, peeled
  • 275 -425 ml water
  • 10 tablespoons vegetable oil
  • 1 kg boneless lamb shoulder or 1 kg stewing beef or 1 kg diced chicken
  • 10 whole cardamom pods
  • 3 bay leaves
  • 8-10 whole cloves
  • 10 whole peppercorns
  • 4 cinnamon/dalchini sticks
  • 4 medium onions, peeled and finely chopped
  • 1 teaspoon ground coriander
  • 2 teaspoons cumin seeds
  • 4 teaspoons red chilli powder
  • 1 teaspoon cayenne pepper
  • 1 teaspoon of Fennel/saunf seed
  • 5-6 sukhi mirch
  • 1 teaspoon salt
  • 6 tablespoons plain yogurt
  • 1/4 teaspoon garam masala
  • fresh ground pepper


Instructions:

1)fry onions separately upto brown-cool it-make a paste of it in a grinder
2)Ghee+3bayleaves+4dalchini+saunf 1tsp+Onions add chicken cubes +salt +water –let it cook
3)roast sukhi mirch in tawa,than blend in a grinder
4)put some oil in a pan-quickly fry the chicken in it-cook upto red than take it out
5)Put some ghee in a pan,add cloves8-10,elaichi/cardmom-6-7 take it out when it become red than add garlic paste 2-1/2 tsp add to it mirchi paste and onion paste step1 & step3,after fry it properly add fried chicken,haldi powder,salt,black pepper powder,add edible colour red
6) add youghurt to above gravy and add water,let it cook
10)take step 5 out of stove when it is done and garnish with coriander leaves.
